Resep Pangek Ikan Nila
Pangek is a traditional Minangkabau cooking technique that involves thickening the spice paste before adding the main ingredients. Traditionally, it was cooked in clay pots over wood-fired stoves and can be used with almost any ingredient.

- Clean the tilapia fish. Coat with lime juice and salt until evenly mixed. Leave it for 15 minutes. Rinse again until clean. Set aside.
- In a pan, boil coconut milk with ground spices, turmeric leaves, lime leaves, lemongrass and kandis acid. Cook until boiling, stirring occasionally so that the coconut milk doesn't break.
- Once the unpleasant smell of the spices has reduced, add the fish. Cook until boiling, stirring occasionally.
- Just before it's cooked, add the long beans and whole bird's eye chilies. Cook until thickened and all ingredients are cooked. Correct the taste. Lift.
- Ready to be served.
- When stirring the sauce, make sure to stir gently so the fish doesn't break up.
