Instructions

  1. Peel the prawns and discard the heads. Wash the shrimp until clean then drain.
  2. Puree/grind the shrimp using a blender.
  3. In a container, mix ground shrimp, tapioca flour, garlic, salt and sugar. Mix well.
  4. Pour in the water little by little, while continuing to stir.
  5. Add the egg, then knead the dough with your hands until it is smooth and not sticky.
  6. Wrap the dough in banana leaves, in an elongated roll shape.
  7. Steam the mixture for 3 hours until cooked. Take it out and let it cool.
  8. Slice the cracker dough thinly, then dry in the sun until completely dry, around 1-2 days.
  9. Heat lots of oil. Fry crackers until fluffy and crispy. Lift and drain.
  10. Ready to serve or store in an airtight container.
  11. 1. Choose really fresh shrimp so that the crackers are delicious. 2. Shrimp can be replaced with rebon. 3. Dry the crackers until they are completely dry so they can expand perfectly when fried. 4.
