  1. Remove the anchovy heads and clean the dirt. Wash clean then coat with lime juice. Leave it for a moment.
  2. In a container, mix the anchovies with ground spices, basil leaves, tomatoes, salt and sugar. Mix well.
  3. Prepare banana leaves, fill them with the seasoned anchovies. Close the banana leaf then pin both ends with toothpicks.
  4. Steam the pepes for 10 minutes. Lift.
  5. Grill the pepes on a flat, non-stick frying pan until both sides of the banana leaves are wilted and fragrant. Lift.
  6. Ready to be served.
