Instructions

  1. Clean the fish then coat with lime juice and a little salt. Leave it for 15 minutes.
  2. Heat a lot of oil then fry the fish until cooked and browned. Lift and drain. Set aside.
  3. Saute ground spices with bay leaves, lime leaves, lemongrass, ginger and galangal until fragrant.
  4. Pour in the water and kluwek soaking water. Stir well.
  5. Add cayenne pepper and tomatoes. Stir well and cook until boiling.
  6. Season with sugar and salt. Stir well and adjust the taste.
  7. Add fish. Stir and bring to a boil again so that the flavors infuse. Lift.
  8. Sprinkle with spring onions and fried shallots.
  9. Ready to be served.
  10. Once the fried fish is in, stir gently until the entire surface of the fish is covered in spices. Bring it to a boil again so that the spices absorb into the fish.
