Instructions
- Clean the fish then coat with lime juice and a little salt. Leave it for 15 minutes.
- Heat a lot of oil then fry the fish until cooked and browned. Lift and drain. Set aside.
- Saute ground spices with bay leaves, lime leaves, lemongrass, ginger and galangal until fragrant.
- Pour in the water and kluwek soaking water. Stir well.
- Add cayenne pepper and tomatoes. Stir well and cook until boiling.
- Season with sugar and salt. Stir well and adjust the taste.
- Add fish. Stir and bring to a boil again so that the flavors infuse. Lift.
- Sprinkle with spring onions and fried shallots.
- Ready to be served.
- Once the fried fish is in, stir gently until the entire surface of the fish is covered in spices. Bring it to a boil again so that the spices absorb into the fish.
