Resep Ikan Bandeng Pepes
If you’re tired of fried or grilled fish, pepped fish is a reliable alternative. Pepped fish is often made with mackerel, tilapia, or carp, but catfish is also delicious when prepared this way.

- Clean the milkfish, remove scales, gills and entrails. Break the tailbone by folding the tail to the right then to the left. Open the gill cavity, hold the spines then pull and remove the spines. Wash clean, drain.
- I rinse the fish with lime juice and a little salt, leave it for a few moments, then rinse again until clean.
- Mix the ground spices well with salt, sugar and thick coconut milk. Spread it evenly over the body of the fish, also cover the inside of the stomach. Let it soak.
- Prepare 2 banana leaves, arrange 2 bay leaves, then place the fish on top. Arrange the tomatoes, cayenne pepper, basil leaves, lemongrass and green onions, and top with the remaining ground spices. Wrap and pin with a stick. Do this until all the fish are neatly wrapped.
- Steam the fish for at least 1 hour until the fish is cooked and soft, remove from heat.
- Lightly grease the pepes wrapping leaves with cooking oil, roast the pepes and the wrapper in a Teflon pan until fragrant. Ready to be served.
- The longer you cook the pepes, the more ripe they become and the spines become softer.
