  1. Clean the white tofu, then cut it into squares. Fry the tofu half cooked, remove and drain.
  2. Mix the mackerel fish meat with eggs, spices and water. Add sago flour little by little while continuing to stir until evenly mixed. Add 1 tablespoon of cooking oil, stir well.
  3. Take a little dough, fill the middle with tofu then cover it again with dough, make a round shape. Do this until the dough runs out. Then fry until cooked.
  4. Gravy: Puree the shallots and garlic, then saute until fragrant. Add the prawns, saute until the prawns change color.
  5. Add water, then season with pepper, salt, sugar and stock powder. Cook until boiling, then add the spring onions, turn off the heat.
  6. Cut the fish into pieces, arrange in a bowl, pour over the sauce.
  7. Serve with vermicelli, cucumber and a sprinkling of fried onions.
