Instructions
- Heat a lot of water, cook until it boils. Add the oxtail pieces then boil until foamy. Discard the water.
- Bring new water to a boil again, add the oxtail and boil until soft.
- Heat oil, saute ground spices until fragrant and cooked.
- Put the stir-fry into the oxtail stew pan.
- Add carrots and potatoes. Cook over low heat until boiling.
- Add salt, granulated sugar, cloves, star anise, cinnamon, cardamom and nutmeg then adjust the taste.
- Add celery.
- Cook until the oxtail is tender and the spices are absorbed.
- Lastly, add the spring onions and tomato slices. Lift.
- Ready to be served.
- To save more time, use a pressure cooker to boil the oxtail with a cooking time of 30 minutes from the sizzling sound.
