  1. Heat a lot of water, cook until it boils. Add the oxtail pieces then boil until foamy. Discard the water.
  2. Bring new water to a boil again, add the oxtail and boil until soft.
  3. Heat oil, saute ground spices until fragrant and cooked.
  4. Put the stir-fry into the oxtail stew pan.
  5. Add carrots and potatoes. Cook over low heat until boiling.
  6. Add salt, granulated sugar, cloves, star anise, cinnamon, cardamom and nutmeg then adjust the taste.
  7. Add celery.
  8. Cook until the oxtail is tender and the spices are absorbed.
  9. Lastly, add the spring onions and tomato slices. Lift.
  10. Ready to be served.
  11. To save more time, use a pressure cooker to boil the oxtail with a cooking time of 30 minutes from the sizzling sound.
