- Make Gravy: Heat oil, saute garlic and ginger until fragrant. Add the chicken broth, cook over low heat until it boils and the broth smells good. Add salt and pepper, adjust the taste until just right. Add the meatballs, cook until fluffy, add the sliced spring onions, turn off the heat, set aside.
- Chicken Topping: Heat oil, saute garlic and ginger until fragrant. Add the chopped chicken, stir until it changes color and crumbles. Add salt, pepper, soy sauce and sesame oil. Cook until cooked and slightly dry, remove from heat, set aside.
- Make Chicken Oil: Heat oil, fry chicken skin over low heat until fragrant. Add chopped garlic, fry again until yellowish. Remove and let cool, then strain.
- Boil water, brew wet curly noodles until soft, remove from heat, drain.
- Prepare a serving bowl, add 1 tablespoon of chicken oil, 1 teaspoon of soy sauce, a little ground pepper, stir well. Put the noodles in a bowl, stir with chopsticks until evenly mixed. Add 1 lettuce leaf. Top with chicken, dry dumplings, sprinkle with sliced celery and spring onions, fried shallots. Serve cwie noodles complete with meatballs and sauce in separate bowls.
- Chicken broth is made by boiling chicken bones or feet, cook over low heat until the broth is fragrant.
