Instructions

  1. Split each jengkol into two parts then soak overnight.
  2. Boil the jengkol with bay leaves and enough water until soft. Use a pressure cooker for approximately 20 minutes.
  3. Crush the jengkol one by one until the skin peels off. Rinse with clean water then set aside.
  4. Heat the oil. Saute ground spices, lemongrass, galangal, turmeric leaves and lime leaves until fragrant.
  5. Add jengkol, stir well.
  6. Pour in the thin coconut milk, salt and sugar. Cook until the coconut milk reduces slightly.
  7. Pour in thick coconut milk. Stir until it boils then adjust the taste. Once it  boils, reduce the heat and continue to cook until the sauce is dry and oily. Lift.
  8. Ready to be served.
  9. 1. Choose old jengkol so that the texture is fluffier. 2. To reduce the smell, soak the jengkol overnight. If necessary, change the soaking water several times. Then boil with bay leaves. 3.
