  1. Add 3 cups baby spinach, 1 pound cooked, rinsed, and cooled rotini pasta, 1 ½ cups cucumber, 1 pint halved cherry tomatoes, 1 cup pitted and halved kalamata olives, ½ cup thinly sliced red onion, and 6 ounces crumbled feta cheese in a large bowl. Toss to combine.
  2. In a small bowl whisk together ½ cup extra virgin olive oil, 2 teaspoons minced garlic, 1 teaspoon dried oregano, 1 teaspoon Dijon mustard, ¼ cup red wine vinegar, ½ teaspoon salt, and ½ teaspoon ground black pepper.
  3. Pour the dressing over the salad and toss until everything is well coated.
