Instructions

  1. In a container, mix fish meat, egg white, salt, sugar, pepper and ice water.  Stir and knead until evenly mixed and smooth.
  2. Add the tapioca flour gradually, while continuing to knead and knead with your hands until the dough feels firm.
  3. In a saucepan, bring water to a boil. Reduce the heat on the stove after the water boils.
  4. Take the dough then mold/roll it into balls using your hands. Immediately put the meatballs into the boiling pot of water. Do this until the dough runs out.
  5. Boil the meatballs until they float and let them cook for a moment so they cook evenly. Lift and drain.
  6. The meatballs are ready to be served, cooked further, or stored in the freezer.
  7. 1. Choose fish with white flesh so that the color of the meatballs can be clean and bright white. 2.
