  1. Clean the fish eggs. Divide into 6 parts. Set aside.
  2. In a container, mix the ground spices with chopped red chilies, cayenne pepper, tomatoes, basil leaves, bay leaves, lime leaves, lemongrass, galangal, beaten eggs and sugar. Stir well. Divide into 6 parts. Set aside.
  3. Prepare a steamer pan on the stove. Add water and cook until the water boils.
  4. Take 2 banana leaves and stack them on top of each other. Put 1 part of the fish eggs and seasoning. Roll up the banana leaf, shape it like a rice cake, and secure both ends with toothpicks. Do this until the dough runs out.
  5. Steam the pepes for 30 minutes until cooked. Lift.
  6. Ready to be served.
  7. 1. If you like it spicy, you can adjust the amount of chili according to your taste. 2. Just before serving, grill the pepes briefly over hot coals so that the aroma comes out more.
