  1. Clean the tuna. Remove the gills and entrails, then cut the fish into pieces. Coat the fish with lime juice. Leave for 10 minutes in the refrigerator.
  2. Fry the fish in hot oil until brown on both sides. Lift and drain.
  3. Heat the oil. Saute ground spices with red chilies, lemongrass, galangal, bay leaves and lime leaves until fragrant.
  4. Pour in coconut milk. Stir and cook until boiling.
  5. Add tamarind water, palm sugar, salt and cayenne pepper. Stir well.
  6. Add tuna and tomatoes. Stir gently and cover the wok/pan. Let it cook until the sauce reduces and thickens. Correct the taste. Lift.
  7. Ready to be served.
  8. 1. Choose fresh tuna, which has chewy/firm flesh when pressed, fresh red gills, and clear eyes. 2.
