Stir Fried Beef and Broccoli with Orange Sesame Sauce

Instructions

  1. Whisk together the sauce ingredients in a small bowl. Set aside.
  2. Toss the steak with the soy sauce. Heat 2 teaspoons oil in 12-inch nonstick skillet over high heat until just smoking. Add the beef and cook, stirring occasionally and breaking up clumps, until lightly browned, about 3 minutes. Transfer the beef to a clean bowl.
  3. Add 1 more tablespoon of oil to the pan and return to high heat until shimmering. Add the broccoli and water to the pan, cover, and cook until bright green and slightly tender, about 2 minutes. Remove the lid, and add bell pepper and water chestnuts, and continue to cook until the vegetables are tender, about 3 minutes.
  4. Clear the center of the pan and add the remaining 1 teaspoon oil, garlic, and ginger. Cook, mashing the garlic mixture into the pan with back of a spatula, until fragrant, about 30 seconds. Stir in the cooked beef. Whisk the sauce to recombine, and add it to the pan. Bring it to a simmer. Cook the sauce until thickened, 1 to 2 minutes. Serve immediately over hot cooked rice.
