Chicken kalio is a delicious dish that sits between gulai and rendang – it’s a rich, browned, and thickened gravy.

Instructions
- Clean the chicken and cut it into 4 parts. Cover the entire surface with lime and let sit for 15 minutes. Rinse the chicken again until clean.
- Saute ground spices, bay leaves, lime leaves, turmeric leaves, lemongrass, ginger and galangal until the spices are fragrant and cooked.
- Add chicken. Stir well.
- Pour in coconut milk. Stir well and cook the chicken until cooked.
- Season with salt, stock powder and brown sugar. Stir well. Cook until the sauce thickens and the oil comes out, but don't let the sauce dry out. Lift.
- Ready to be served.
- Remove the kalio when the sauce is thick and releases oil. This kalio sauce is thicker than curry.
