  1. Clean the trevally fish, remove the gills and stomach contents through the gill cavity, then wash thoroughly.
  2. Cover with lime juice and a little salt, let sit for 5-10 minutes. Fry the trevally fish until cooked and crispy, set aside.
  3. Heat 2 tablespoons oil, saute the ground spices until fragrant. Add bay leaves, lime leaves and lemongrass, sauté again for a minute.
  4. Pour in the water, season with salt, sugar, powdered stock and ground pepper, stir until smooth. Cook until boiling, adjust the taste.
  5. Add the fried trevally fish, stir gently, cook until the spices are absorbed.
  6. Add the tomato slices, whole cayenne pepper, cook briefly until wilted. Add basil leaves, lift and serve.
  7. Fry the trevally fish over medium heat, turning it over slowly when one side feels dry enough, do it slowly and only occasionally so it doesn't fall apart.
