  1. Blend all the spice ingredients.
  2. Crumble the galangal and lemongrass.
  3. Tear the lime leaves, remove the stems, set aside.
  4. Heat oil in a frying pan, then saute ground spices, lemongrass, galangal and lime leaves until fragrant.
  5. Add the bay leaves and chopped chicken, stir well. Cook until the chicken changes color.
  6. Add thin coconut milk, cook until it boils.
  7. Add salt and sugar, stir well. Cover the pan, cook until the chicken is tender and the spices are absorbed.
  8. Add thick coconut milk, cook until it boils.
  9. Check the taste, if it's right, turn off the stove.
  10. Serve the chicken opor with a sprinkling of fried shallots.
  11. Opor will be more delicious if you use free-range chicken.
