Resep Ayam Serundeng
You can use leftover spice paste from the chicken marinade by adding shredded mature coconut (serundeng). This crispy, fried coconut adds a delicious crunch to your fried chicken.

Instructions
- Saute ground spices with bay leaves, lemongrass and lime leaves until fragrant and cooked.
- Add the chicken and stir until the spices are mixed evenly. Cook until the chicken changes color.
- Add water, tamarind water, salt, granulated sugar and grated coconut then stir well. Cook/uncover until the chicken is cooked and tender for 1 hour, using low heat. Lift.
- Prepare oil for frying. Fry the chicken with the coconut until brown. Lift and drain.
- Ready to be served.
- 1. The water for covering the chicken can be replaced with a measured amount of diluted coconut milk. 2. For serundeng results that are crispy and not wet, use grated coconut with the epidermis.
