Instructions

  1. Saute ground spices with bay leaves, lemongrass and lime leaves until fragrant and cooked.
  2. Add the chicken and stir until the spices are mixed evenly. Cook until the chicken changes color.
  3. Add water, tamarind water, salt, granulated sugar and grated coconut then stir well. Cook/uncover until the chicken is cooked and tender for 1 hour, using low heat. Lift.
  4. Prepare oil for frying. Fry the chicken with the coconut until brown. Lift and drain.
  5. Ready to be served.
  6. 1. The water for covering the chicken can be replaced with a measured amount of diluted coconut milk. 2. For serundeng results that are crispy and not wet, use grated coconut with the epidermis.
