Surprisingly, gado-gado isn't just a Jakarta specialty – West Sumatra also has its own version. Instead of rice cakes, Padang gado-gado typically includes yellow noodles, and uses pink/red crackers, similar to those served with Padang soto.

  1. Heat some oil. Saute ground spices until fragrant.
  2. Puree the stir-fry spices and all the peanut sauce ingredients using a blender.
  3. Transfer the pureed peanut sauce to a saucepan. Cook until it explodes and thickens. Turn off the heat.
  4. Serve: Arrange noodles, potatoes, vegetables, tofu and eggs on a serving plate. Drizzle with peanut sauce then top with red crackers.
  5. To keep the color beautiful, boil the vegetables (beans, bean sprouts, cabbage) for a short time over high heat until the color changes to light. Immediately remove the boiled vegetables and cover with cold water to stop the cooking process.
