Instructions
- Boil the chicken feet in 750 ml of water with ginger, lime leaves, bay leaves and 1/2 teaspoon salt until tender, once cooked, separate from the sauce.
- Heat the oil, briefly fry the claws until the skin of the claws changes color but is not dry, set aside.
- Fry the firecracker spices until wilted before mashing.
- Coarsely chop the firecracker spices then saute until the spices are fragrant.
- Add 1/2 tsp salt and sugar to the stir fry, adjust the taste.
- Finally add the fried claws, stir well and serve.
- 1. Choose chicken feet with clean skin, and make sure the chicken feet are cleaned perfectly. Remove part of the nail with scissors or a knife. 2. If you want the chicken skin to easily separate from the bones when eating, after boiling, put the feet in water with lots of crushed ice cubes.
