- Season the 1½ pounds boneless skinless chicken pieces with ½ teaspoon salt and ¼ teaspoon pepper. In a large skillet, heat the 1 tablespoon olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes until the chicken is cooked through and no longer pink.
- Add 2 teaspoons garlic, 1 teaspoon paprika, 2 teaspoons dried Italian seasoning, and 1 cup sun-dried tomatoes,. Stir and cook for 2 minutes to infuse all the flavors.
- Stir in 1 cup dry orzo pasta and 2½ cups chicken broth, then bring to a boil. Lower the heat to a simmer and cover the skillet with a lid. Cook for 10-12 minutes or until the orzo has softened.
- Pour in 1 cup half-and-half, and stir to combine. The orzo will absorb the liquid quickly, so add more if needed.
- Add 1 cup grated parmesan cheese and ½ cup fresh basil,. Stir to melt the cheese and wilt the basil. Season with additional salt and pepper, if needed. Serve immediately!
