- Boil tripe and beef lung with lime leaves until tender, remove from heat, let cool then cut into pieces.
- Boil the meat with 2 liters until it boils, remove the foam, continue boiling until the meat is tender.
- Remove the meat, then cut it into pieces.
- Add the meat, tripe and lungs to the boiling broth.
- Uleg or blender ground spices.
- Heat oil, saute ground spices until fragrant.
- Add the lemongrass, galangal, lime leaves and bay leaves, stir-fry again for a minute.
- Add the spices to the meat stew.
- Add salt, sugar and stock powder. Cover the pan and continue cooking so that the spices become more absorbed.
- Serve soto with white rice, celery, fried shallots, lime and chili sauce.
