Instructions

  1. Boil tripe and beef lung with lime leaves until tender, remove from heat, let cool then cut into pieces.
  2. Boil the meat with 2 liters until it boils, remove the foam, continue boiling until the meat is tender.
  3. Remove the meat, then cut it into pieces.
  4. Add the meat, tripe and lungs to the boiling broth.
  5. Uleg or blender ground spices.
  6. Heat oil, saute ground spices until fragrant.
  7. Add the lemongrass, galangal, lime leaves and bay leaves, stir-fry again for a minute.
  8. Add the spices to the meat stew.
  9. Add salt, sugar and stock powder. Cover the pan and continue cooking so that the spices become more absorbed.
  10. Serve soto with white rice, celery, fried shallots, lime and chili sauce.
