This comforting ham and bean soup is a classic and delicious dish, filled with creamy white beans, smoky ham, and tender vegetables – it’s a perfect way to use up leftover ham and is easy to make on a busy evening.

- In a large pot, heat 2 tablespoons butter over medium heat. Add the 1/2 cup onion, 1 cup carrot, and 1/2 cup celery, and cook until tender. Add 2 garlic cloves, and cook for 30 seconds.
- Sprinkle 1 1/2 tablespoons all-purpose flour over the cooked veggies and stir to combine.
- Add in 4 cups low-sodium chicken broth, 3 (15 ounce) canned white beans,, 2 cups cooked ham, 1 bay leaf, 1 teaspoon dried thyme, and 1/2 teaspoon black pepper. Stir to combine.
- Bring to a low boil, then reduce the heat to a simmer. Simmer for 15 to 20 minutes, stirring occasionally.
- Remove the bay leaf then taste and season with salt to taste, if needed.
- Garnish with fresh thyme and enjoy!
