- Rub 2 pounds salmon fillets with 1 tablespoon olive oil and rub with the spice mix.
- Grill the salmon on medium heat for about 3-5 minutes or until desired doneness.
- For the salsa, mix 1 avocado chopped, 1 Roma tomato chopped, ½ small red onion chopped, ½ cup corn, 2 tablespoons finely chopped cilantro, dash of salt, and juice from 2 limes in a small mixing bowl. Top the salmon with the avocado salsa.
