- Clean the goldfish, cut into pieces and wash until clean. Cover with lime juice and salt, let sit for 10 minutes, then rinse until clean, set aside.
- Heat oil, saute ground spices and complementary spices until fragrant. Add thin coconut milk, then cook until boiling.
- Add the goldfish, add salt, sugar and seasoning. Cook over low heat until the fish is cooked.
- Add long beans, cook until half cooked.
- Add the thick coconut milk, cook until it boils again, stirring gently so that the coconut milk doesn't break.
- Serve the carp curry while warm.
- If you use large goldfish, make sure the head of the fish is cooked all the way in, because the head takes the longest to cook.
