  1. Blend all the spice ingredients, shallots, garlic, large red chilies, cayenne peppers, tomatoes and candlenuts. Then sauté with a little oil. Add lemongrass, ginger, galangal and lime leaves, stir-fry until fragrant. Turn off the heat.
  2. Wash the chicken, cut into small pieces then boil in 1.5 liters of water.
  3. Boil until the chicken is cooked, add the sauteed ground spices, stir well.
  4. Add the button mushrooms, fish balls and whole bird's eye chilies.
  5. Add fish sauce, season with salt and sugar until it tastes right. Cook over low heat until boiling.
  6. Add 2 tablespoons of lime juice, stir well. Turn off the heat.
  7. Pour into a serving bowl, serve while warm.
