  1. Clean the tilapia fish. Take the meat by filleting it, then slice the meat lengthwise. Coat the meat, bones and head of the fish with lime juice. Leave it for 30 minutes. Wash again with running water. Set aside.
  2. In a pan, roast the ebi until fragrant. Pour 1 liter of water. Add fish bones and heads, spring onions and bay leaves. Cook until boiling. Remove and strain the broth. Set aside.
  3. In a pan, heat some oil. Saute the garlic until fragrant. Add the fish stock and tilapia fillets.
  4. Season with salt, pepper, stock powder, fish sauce and fried shallots. Cook until the fish is cooked then adjust the taste. Lift.
  5. Arrange lettuce leaves, salted mustard greens and green tomatoes in a serving bowl. Pour in the sauce and the fish meat.
  6. Ready to be served.
  7. 1. Tilapia can be replaced with other types of fish that have white flesh. 2. For those who like spicy food, whole bird's eye chilies can be added when cooking the soup.
