  1. Boil tripe in 2 liters of water for 90 minutes until tender. Drain the tripe and discard the cooking water. Cut the tripe into small pieces. Set aside.
  2. Heat the oil. Saute ground spices with bay leaves, lime leaves, lemongrass, galangal, cloves and cardamom until fragrant.
  3. Enter the tripe. Stir well.
  4. Pour in coconut milk and water. Stir well.
  5. Season with salt, pepper, stock powder and sugar. Stir well and cook until boiling.
  6. Add spring onions, bean sprouts, tomatoes and fried shallots. Stir briefly until the bean sprouts are half cooked. Lift.
  7. Ready to be served.
  8. 1. Wash the tripe with running water while gently rubbing the towel-like part, so that the dirt is removed completely. 2. Pay attention to the direction of the tripe meat fibers when cutting. Cut the tripe against the grain so it is not tough.
