  1. Heat oil, saute shallots until wilted. Then add the ground spices, bay leaves, turmeric leaves, lemongrass, lime leaves, stir-fry until fragrant. Add ground chilies, saute briefly.
  2. Boil water, add beef and stir-fry spices. Cook over low heat until the meat is half cooked.
  3. Add salt, stock powder and kandis acid, continue cooking until the meat is tender, the spices are absorbed and the sauce has reduced.
  4. Check the taste, then turn off the heat. Serve with white rice.
