Resep Soto Sokaraja
This authentic Soto Sokaraja from Banyumas is both delicious and distinctive, served with rice cakes, crispy red kanji crackers, and a flavorful, slightly spicy peanut sauce.

- Peanut Sauce: Blend the fried peanuts, chilies, shallots and garlic, add salt, brown sugar, tamarind juice, then brew with hot water, stir until smooth. Set aside the chili sauce.
- Soto: Boil water, cook the meat until cooked and tender, then remove the meat, cut into pieces, set aside. Reserve 1.5 liters of stock.
- Heat oil, saute ground spices, bay leaves, lemongrass, galangal, lime leaves and ginger until fragrant. Add it to the beef broth. Season with salt, pepper, granulated sugar and beef stock powder. Stir well and cook until boiling, adjust the taste.
- Add the meat that has been boiled and cut into pieces, cook briefly, then remove from heat.
- Prepare a serving bowl, ketupat, vermicelli and bean sprouts. Pour with hot soto sauce along with the meat pieces. Sprinkle with fried shallots, green onions, celery and fried soybeans, serve while hot with red crackers and peanut sauce to taste.
- 1. If you want it to be even more savory, you can also use a mixture of offal such as iso and tripe. 2. There are two versions of soto sokaraja, with beef and shredded chicken. If you like, you can also replace beef with chicken.
