- Wash the ducks clean. Burn/grill briefly so that the fine hairs disappear and the oil comes out. Wash the duck again then cut it into 4 parts. Cover with lime juice then let sit for 15 minutes.
- Heat the oil then saute the ground spices with lime leaves and bay leaves until fragrant.
- Add the duck, lemongrass, turmeric leaves and galangal. Stir well.
- Pour in the coconut milk then stir well. Let it cook over low heat for 60 minutes or until the duck is tender. Lift.
- Ready to be served.
- The fishiest part of a duck is the tail (rump or brutu). It's best to discard this part.
