Instructions

  1. Wash the ducks clean. Burn/grill briefly so that the fine hairs disappear and the oil comes out. Wash the duck again then cut it into 4 parts. Cover with lime juice then let sit for 15 minutes.
  2. Heat the oil then saute the ground spices with lime leaves and bay leaves until fragrant.
  3. Add the duck, lemongrass, turmeric leaves and galangal. Stir well.
  4. Pour in the coconut milk then stir well. Let it cook over low heat for 60 minutes or until the duck is tender. Lift.
  5. Ready to be served.
  6. The fishiest part of a duck is the tail (rump or brutu). It's best to discard this part.
