Resep Soto Padang
Padang is renowned for its delicious cuisine, and like other Indonesian regions, it boasts a unique soto – specifically, Padang Soto, which features deep-fried beef slices.

Instructions
- Grind the ground spices with a ulegan or food processor, set aside.
- Boil the beef until it boils, remove the foam.
- Add the wet spices, cook until the meat is tender and the broth is fragrant.
- Heat 3 tablespoons oil, saute ground spices until fragrant. Add dry spices, sauté for another minute.
- Add the sauteed ground spices to the boiling broth. Add salt and beef stock powder, stir well and adjust the taste.
- Reduce the heat, remove the meat, also remove the spices so that the sauce is clean. Drain meat and cool.
- Roughly chop the spring onions, add to the sauce, bring to a boil again.
- Slice the meat thinly against the grain, bruising with a pestle if necessary.
- Heat oil, fry the beef slices until dry and crispy. Remove and set aside.
- To serve, arrange vermicelli, fried meat and potato cakes on a serving bowl. Sprinkle with sliced celery.
- Drizzle with hot sauce.
- Sprinkle with fried shallots, serve with red crackers, chili sauce and lime juice.
