  1. Chop vegetables, set aside.
  2. Blend the spices: shallots, garlic, candlenuts and grilled shrimp paste.
  3. Heat coconut milk, add ground spices, salam, galangal.
  4. Cook until it boils.
  5. Add the hard vegetables first, about 1 minute apart: Chayote, melinjo, then corn. Cook until half cooked. Add long beans, cook until half cooked. Then add the eggplant, green chilies and melinjo leaves.
  6. Season with salt, sugar and stock powder. Correct the taste.
  7. Cook until cooked and all the vegetables are soft.
  8. Remove and serve warm.
  9. 1. Add the vegetables gradually from those that take the longest to cook to those that cook the fastest. 2. Soak the eggplants in salt water to prevent them from oxidizing. 3.
