  1. Wash the chicken and coat it with lime juice. Massage for a while then rinse again with water.
  2. Put all the ingredients for making Hainanese chicken into a pan. Cook for 45 minutes until the chicken stock comes out. Turn off the heat. Strain the broth and set aside for cooking rice, making sauce, and as a side sauce when serving. Remove, drain and cut the chicken into pieces.
  3. Rice: Wash the rice thoroughly. Put all the ingredients for making rice into the rice cooker and cook the rice as usual until cooked.
  4. Sauce: Mix all sauce ingredients together. Stir well.
  5. Arrange rice and chicken on plates. Serve with sauce and broth. Ready to be served.
  6. 1. If you don't like boiled chicken, you can rub Hainanese chicken again with sesame oil then grill briefly until browned. 2.
