- In a saucepan, mix the chicken with ground spices, bay leaves, galangal, and water. Cook using low heat until the water reduces and the spices are absorbed. Turn off the heat.
- Heat the oil. Take the chicken then pound/beat it using a pestle. Fry the chicken in hot oil until brown on both sides. Lift and drain. Chicken is ready to be served with chili sauce, fresh vegetables and warm white rice.
- Sambal: Fry the shallots and cayenne pepper until they look wilted, then remove from heat. Coarsely grind the shallots, cayenne pepper and other chili sauce ingredients. Heat the oil, then fry the chili sauce for a moment. Lift and ready to use.
- Use low heat when covering the chicken so that the spices are better absorbed.
