- Heat some oil. Saute ground spices with lemongrass, bay leaves and lime leaves until fragrant.
- Pour in the water and sour water, and add the salt and sugar. Stir well and cook until boiling.
- Add the duck and stir well. Reduce the heat and cook until the duck is tender and cooked. Lift.
- Heat lots of oil. Fry the duck over medium heat until brown. Lift and drain.
- Yellow Sauce: Cook the remaining duck stew until it thickens. Discard the pulp and set aside.
- Serve the fried duck with white rice and a splash of yellow sauce.
- So that it doesn't smell fishy, boil the duck first without any spices until it boils, then discard the cooking water. Only then does it go into the boiling process with the other spices.
