  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions. Drain but do not rinse, add the pasta back to the pot and set aside.
  2. Meanwhile, in a medium skillet, melt the butter over medium heat. Add the onion and cook until softened and it begins to brown slightly, about 10-12 minutes.
  3. Add the onion to pasta along with cottage cheese, salt, and pepper. Cook over medium heat until the sauce is heated through.
  4. Serve with a dollop of sour cream and garnish with parsley if desired.
