  1. Cut the chicken into small pieces, rub with lime juice and a pinch of salt, leave for 15 minutes. Wash, rinse until clean, drain.
  2. Heat oil, saute ground spices, lemongrass, galangal and lime leaves until fragrant.
  3. Add chicken, stir until it changes color. Reduce the heat, cover the pan, cook until the water comes out. Add water, add salt, sugar, pepper and stock powder, stir well. Continue cooking over low heat until the chicken is cooked and the water has reduced.
  4. Serve chicken dangkot with white rice.
  5. 1. If using a large/old village chicken, first boil the chicken pieces until they are half tender and then process them. 2. The amount of cayenne pepper according to your spicy taste, can be increased or decreased.
