Instructions

  1. Fry the anchovies until dry brown, remove and drain.
  2. Cut the petai into pieces then fry briefly until wilted, set aside.
  3. Puree with a blender the spices, shallots, red chilies, cayenne pepper and salt. Add a little hot cooking oil to make it easier to smooth.
  4. Saute finely chopped shallots until fragrant, add ground spices, brown sugar and salt. Stir well.
  5. Add lime juice. Cook until the spices are cooked.
  6. Once the spices are cooked, add the anchovies and petai, stir well until the anchovies and petai are coated in the spices. Lift.
  7. The bada sauce is ready to be served.
  8. Store in a tight, airtight jar and place in the refrigerator for a longer shelf life.
