- Clean the tilapia, remove the gills and entrails then wash until clean. Cover with lime juice and salt, let stand 10 minutes. Then rinse with running water until clean, set aside.
- Heat oil, saute ground spices and complementary spices until fragrant and change color. Add thin coconut milk, cook while stirring until it boils.
- Add the tilapia, add salt, sugar, ground pepper and seasoning. Cook over low heat, stirring gently until the fish is cooked.
- Add the sliced spring onions and red chilies, also add the thick coconut milk, cook until it boils and the chilies wilt.
- Check the taste, if it's right then lift and serve.
