Instructions
- Boil the claws in a little water until all the dirt comes out. Remove then wash the claws until clean. Rinse then drain.
- Boil the claws again in 1.5 liters of water, bay leaves and stock powder until tender. Set aside.
- Heat some oil. Saute ground spices with galangal, lemongrass and lime leaves until fragrant. Remove then stir fry in the boiled claws.
- Add the leeks, celery, salt and ground pepper to the boiled claws. Stir well then continue cooking until boiling. Correct the taste. Turn off the heat.
- Arrange vermicelli, cabbage and bean sprouts in serving bowls. Pour in the soto sauce and chicken feet. Top with sliced eggs and sprinkle with fried onions.
- Ready to be served.
- 1. The claws must be boiled twice so that the sauce is clear and does not have a rancid smell. 2. If you want it faster, you can use the Vicenza Pressure Cooker VP 308/8L pressure cooker (see Lazada DISCOUNT) to soften the claws.
