Instructions

  1. In a pan, add the chicken, water and all the cooking ingredients. Stir well and cover until the spices are absorbed and the water is reduced.
  2. Heat the oil. Fry the chicken until skinned, then remove and set aside. Coarsely shred the chicken. Set aside.
  3. In a frying pan, heat some oil. Saute ground spices with lime leaves, bay leaves, lemongrass and galangal until fragrant.
  4. Add shredded chicken, water, salt and stock powder. Stir well and cook until the water reduces.
  5. Just before lifting, pour in the lime juice. Stir well and remove from heat.
  6. Ready to be served.
  7. 1. For a more sour taste, add tomatoes in ground spices. 2. Screamed chicken is also delicious as a filling for grilled rice.
