  1. Clean the shrimp, remove the skin and head, then wash thoroughly. Set aside.
  2. In a bowl, mix all-purpose flour and water. Mix well and set aside.
  3. In another bowl, mix the flour and cornstarch. Mix well and set aside.
  4. Heat lots of cooking oil.
  5. Take the prawns, dip them in the wet flour mixture, then roll them in the dry flour mixture. Fry the shrimp in hot oil over medium heat, until brown. Do this until the shrimp are finished. Lift and drain. Set aside.
  6. Heat 1/2 tablespoon cooking oil. Saute garlic, red chilies, cayenne pepper and spring onions. Stir until the onions look slightly browned.
  7. Add the shrimp to the stir fry. Stir well.
  8. Season with salt. Stir well. Lift.
  9. Ready to be served.
  10. When sautéing onions and chilies, use just a little oil so that the dish doesn't get too oily.
