Instructions

  1. Coat the chicken with ground spices and bay leaves until evenly coated. Leave for 30 minutes in the refrigerator. Transfer the chicken to a heat-resistant container/dish.
  2. Bake the chicken at 180°C for 40-50 minutes in the oven until cooked. Take it out and let it cool. Shred the chicken. Set aside.
  3. Sambal: Fry all the chili ingredients except lime, salt and sugar. Remove then grind with salt and sugar until the texture suits your taste. Drizzle with lime juice. Stir well.
  4. In a bowl, mix the shredded chicken with the chili sauce. Mix well.
  5. Ready to be served.
  6. 1. Before cooking, pierce the chicken with a fork so that the spices can penetrate. 2. Don't make the chicken pieces too big so they can cook all the way through when grilled.
