Instructions
- Preheat oven to 400 degrees Fahrenheit. Spray a 13 x 9 x 2-inch rectangular baking dish with nonstick cooking spray. Place the uncooked 8 ounces spaghetti noodles, in the bottom of the prepared baking dish.
- Place 1 (10.8-ounce) frozen vegetable medley, I used an Asian medley, on top of the uncooked spaghetti noodles.
- Next, add 1 pound chicken breasts, pieces on top of the noodles and vegetables.
- In a medium-sized bowl, whisk together the 2 cups chicken broth, ¼ cup soy sauce, ¼ cup honey, 1 tablespoon brown sugar, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, ½ teaspoon ground ginger, 1 teaspoon minced garlic, and 1 tablespoon cornstarch. Pour over the pasta, vegetables, and chicken.
- Cover with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and gently stir to loosen the noodles from the bottom of the pan. Bake uncovered for 20 minutes or until the chicken is fully cooked and the noodles are tender.
- Enjoy with sesame seeds and chopped green onion, on top!
