  1. Take the gourami fish fillet and cut it into squares. Cover with orange juice and salt to taste. Leave it for a moment then rinse with water until clean.
  2. In a pan, boil water until it boils.
  3. Add garlic, shallots, ginger, lemongrass and lime leaves. Stir well.
  4. Add fish, tomatoes and cayenne pepper. Cook until it boils again and the fish is cooked.
  5. Season with salt and sugar. Correct the taste.
  6. Add basil leaves and cook briefly. Lift.
  7. Ready to be served.
