  1. Clean the milkfish, remove scales, gills and entrails. Break the tailbone, then cut the body quite close to the bone. Wash clean with running water.
  2. Coat the milkfish with lime juice, leave for a few moments, then rinse again until clean, drain.
  3. Blend the grated garlic, salt, turmeric, ginger, coriander and galangal.
  4. Rub the ground spices evenly over the body of the fish, let it soak. Sprinkle flour lightly.
  5. Heat a lot of oil, fry the milkfish until cooked and crispy on both sides, drain.
  6. Serve fried milkfish with chili sauce and fresh vegetables.
  7. 1. Slice the milkfish at close range so that the fish can be crispy and the spines can be eaten. Use a sharp knife so that the fish is not crushed. 2. Cut the milkfish into several pieces if using large milkfish.
