- Make Broth: Heat water until boiling, add chicken, cook until boiling again. Skim off any floating foam to keep the broth clear. Add the tied leeks, cook over low heat for 30 minutes until the broth is fragrant and the chicken is cooked.
- Mix in the ground spices. Heat oil, saute ground spices until fragrant. Add bay leaves, lime leaves, ginger, galangal, lemongrass and nutmeg, stir-fry briefly.
- Add the stir-fried spices to the broth. Add salt, sugar and stock powder, adjust the taste.
- Remove the chicken from the boiling broth, fry briefly until slightly browned.
- Shred the chicken meat. Use a fork if it's too hot, or slice with a knife.
- Prepare complementary materials. Brew vermicelli with hot water until soft, drain.
- Boil the bean sprouts briefly, drain.
- Slice tomatoes and slice celery for garnish.
- Serve: Arrange the rice in a bowl, top with vermicelli, bean sprouts, sliced tomatoes and shredded chicken. Drizzle with hot soto sauce.
