  1. Chop the chicken fillet or process it with a chopper, don't make it too fine.
  2. Put the chopped chicken into the bowl. Add shallots, garlic, carrots, green onions, eggs, sesame oil, oyster sauce, soy sauce, fish sauce, ngohiong seasoning, salt, sugar and pepper. Stir until all ingredients are evenly mixed.
  3. Add cornstarch, stir again until the flour is evenly mixed with the other ingredients.
  4. Spread out the beancurd, fill with a few tablespoons of dough, roll and trim. Do this until all the dough is used up and wrapped neatly.
  5. Heat the steamer, grease with oil. Steam the ngohiong chicken shrimp until cooked for 20 minutes. Turn off the stove and let the heat dissipate first.
  6. Fry the ngohiong until the skin is crispy, cut into pieces then immediately serve with chili sauce.
  7. Ngohiong can also be cut first and then fried for a crispier taste.
