  1. In a food processor or dry blender, puree the chicken, garlic, shallots, and ice cubes until smooth and evenly mixed.
  2. In a bowl, mix the chicken mixture with salt, sugar, pepper, stock powder, sesame oil and fish sauce. Stir well.
  3. Add tapioca flour and egg white. Stir the mixture until smooth. Meanwhile, boil water in a saucepan.
  4. Shape the dough into balls with the help of 2 tablespoons, then place in a pan of boiling water. Do this until the dough runs out.
  5. Boil the meatballs until they float and leave for a moment until the meatballs are cooked. Lift and drain.
  6. The meatballs are ready to be served, cooked further, or stored in the freezer.
